Abstract
The invention relates to improved fat compositions and emulsified food spreads, e.g. margarines prepared therefrom, as well as to processes for their preparation. The fat composition comprises a liquid vegetable oil of a high polyunsaturated fatty acid content on the one hand, e.g. sunflower and safflower oil, and a specific hardstock on the other hand. The hardstock should at least contain a bottom fraction of a substantially saturated hard fat, i.e. a fraction obtained by removing the higher melting constituents of a hard fat, preferably a hard fat which prior to fractionation had been interesterified. As compared with prior art products of a similar polyunsaturated fatty acid content, the fat compositions are harder and moreover after production they very much faster increase in hardness.

A sunflower-oil-based edible fat blend suitable for preparing a margarine having a pleasing texture and a high linoleic acid content are disclosed. The edible fat blend comprises at least one randomly interesterified portion and a non-interesterified portion. An essential interesterified portion, requires the inclusion of at least 30% hydrogenated sunflower oil, while the non-interesterified portion requires at least 60% liquid sunflower oil containing at least 65% linoleic acid. Optionally, a third portion can be employed which will consists essentially of randomly interesterified liquid sunflower oil. The edible fat product will contain less than 21% total of palmitic and stearic acids and from 32 to 55% linoleic acid. Both tub and stick margarines prepared from the edible fat product are disclosed.

The present invention relates to water-in-oil emulsion-spreads of the print margarine type containing a hard fat component obtained by random interesterification of substantially saturated triglycerides rich in lauric fats. Such a hard fat component imparts to the emulsions a consistency which is higher than could be expected on the ground of their solid fat content and enables the incorporation of a relatively large amount of liquid oils of the polyunsaturated type in said print margarines.

There is disclosed a margarine fat blend comprising a liquid oil and a hardstock predominantly of triglycerides from 2 saturated C.sub.16-18 -fatty acids and 1 saturated C.sub.12-14 -fatty acid. Said hardstock can be used at levels as low as 4% by weight along with liquid oils comprising triglycerides from polyunsaturated fatty acids, for producing diet margarines. A process for producing said margarine fat blend is also disclosed, comprising interesterification of (a) triglycerides rich in C.sub.16-18 -fatty acid residues with (b) triglycerides rich in C.sub.12-14 -fatty acid residues and fractionation of the interesterified mixture.

A package containing margarine or a similar spread (3), at least the surface of which that is not in contact with the walls of the package being provided with a thin coating formed by a substantially pore-free, edible fat layer (6) which does not contain a discontinuous aqueous phase, is not separately perceptible to the average consumer without auxiliary means and may contain a non-aqueous, physiologically acceptable filling agent, such as gas, dispersed therein. This package decreases, among other things, the risk of mould formation and discoloration on the free surface of the spread contained therein.
