Undesirable odors are removed from fatty ester mixtures which, in addition to other components, contain the esters of highly unsaturated fatty acids, in particular of highly unsaturated 3-fatty acids, such as eicosapentaenoic acid or docosahexaenoic acid, by a process in which the fatty ester mixture is treated with a complex hydride, in particular with sodium borohydride solution. The process is particularly suitable for removing undesirable odors from fatty ester mixtures obtained from fish oil, for example by transesterification with an alkanol of 1 to 3 carbon atoms.
Fish oil concentrates, having: .gtoreq.40% of long chain poly unsaturated fatty acids <20% of saturated fatty acids (C.sub.14 -C.sub.18) <15% oleic acid <12% C.sub.16:1 --fatty acid and with a weight-ratio: DHA=0.5-3.0 EPA can be obtained by a process involving the following steps subjecting a fish oil to an enzymic conversion removing free fatty acids or esters from conversion-product subjecting product of above to enzymic hydrolysis, using 1.3-specific lipase or partial glyceride-specific lipase wash and dry product re-esterify dried product

The present invention is directed to improving productivity of an enzymatic method for making esterified, transesterified or interesterified products. Specifically, a method that can greatly improve the productivity of enzymatic transesterification or esterification by deodorization alone, or by deodorization and purification of the initial substrate to extend the useful life of the enzyme is disclosed.
